You probably could use white. Brown has a little more texture and you're going for a carmelized look and flavor. You can also probably do this on the stove top by covering the pan and heating on low heat.

Cool, ive always wanted to do them but was too lazy to ask mom to show. Can u use white sugar? do they necessarily have to go in the oven?
