Time lapse video of garlic infusing 80 pounds of tri-tip in preparation for the Meathead Movers 2,280 Safety Party where we'll be watching, former Meathead, Chad Mendes fight for the UFC Title.

Blend of 8 Spices:
1.) Pepper
2.) Garlic Powder
3.) Onion Powder
4.) Sea Salt
5.) Crushed Red Pepper
6.) Cinnamon
7.) Chili Powder
8.) secret :)

Prep Steps
1.) Cut the garlic in half. Leaving big chunks is ok, once slow roasted they won't be overpowering, quite opposite they will be delicious.
2.) Stab the tri-tip ever 2-3 inches around the perimeter, inserting a garlic sliver. Be careful with that knife!
3.) Rub down the tri-tip covering all sides with the spice mixture
4.) Place in a pan and refrigerate for two days. Too long and the spice will be overpowering, too short and you won't achieve full flavor infusion.
