【台南芋籤粿】
【材料】:芋頭1個(約2斤)、細地瓜粉1又1/2杯、櫻花蝦1兩、香菜末適量、二砂糖1大匙、醬油1小匙、鹽1小匙、五香粉1/2小匙、白胡椒粉1/2小匙、甜辣醬適量
【做法】:
1、芋頭去皮刨絲後,加入醬油、鹽、糖、五香粉、胡椒粉調味後,再倒入細地瓜粉,拌勻即完成「南芋頭絲餡」。
2、接著準備一個長方型容器舖上玻璃紙後,再把攪拌好的芋頭絲餡均勻舖上。
3、起蒸鍋轉大火把芋頭絲餡放入鍋中蒸,蒸約20-30分鐘。
4、起鍋熱油,再把櫻花蝦放入鍋中炒香後,加入胡椒粉、醬油調味即可起鍋備用。
5、把蒸好的芋頭絲餡起鍋,最後再舖上「櫻花蝦」即完成這道「台南芋籤粿」。

【酥炸芋絲】
【材料】:芋頭半個、脆酥粉1杯、水4大匙、五香粉1/3小匙、鹽1/2小匙、糖1/2小匙
【做法】:
1、把把剩餘的芋頭絲餡, 加入酥脆粉、用手抓勻即完成「芋絲餡」。
2、起一油鍋,接著用手抓起約巴掌大小的餡料,用手按壓後即可放入鍋中炸。
3、炸至金黃色狀時,轉大火,把多餘的油份逼出後,即可瀝油起鍋就完成「酥炸芋絲」。
