I was following the instruction on a tub as well. (just like this video) My gumpaste did not turn out to be like yours! It was so dry, and crumbly. Did you add more water? (I did add extra water, but still not soft.)
Also, I noticed you had bunch still left in the bowl!!! I bet if you try to mix all the stuff stuck on a bottom of your bowl, your paste would've been dry as well.

Not really, I just placed my rolling pin over the opening, it was just while I worked on the others, It's just to help them not dry out as fast. . but you could definitely use a sealed bag for them.
