I like how the dutch just lost New Amsterdam so easily. Also how religious freedom was protected by the board. Well I hope that in the next section of this documentary the British preserve the same freedoms with their reign.

The takeover was actually connected to the Second Anglo-Dutch War. The Dutch won the war by sailing up the Thames and destroying almost the entire English war fleet and capturing the flagship the Royal Charles (Raid on Medway). This gave the Dutch leverage at the negotiation table (1667 Treaty of Breda). The terms of the treaty were that the Dutch were allowed to keep Surinam (which remained Dutch until 1975) and the British could keep New Amsterdam.
