I like risoto, though I think my sainted gramma would cluck her tongue at you for using frozen peas and onions...and the soup. Well, what the fuck does she know, she's dead.

Bill, being a vegetarian I use mushroom soup and vege stock cubes with some wine. I also add mushrooms and Quorn Pieces. The taste is amazing! You should try cooking a TAGINE, it's a Morrocan dish, lots of deep spice flavours. It would work best with meat so you would be OK.

Eww. Add the wine before the risotto, you need to cook the alcohol out of it first. Throw the crappy canned soup in the bin and make FRESH STOCKS.. it's eaaaasy. Use fresh veg. Ever heard of herbs? They're the (usually) green/leafy things, that aren't lettuce & make things taste good. Use some. Well... at least you added the stock in small amounts, but loads of things you could change with this to make it better. pm me if you wanna make it good, y'know, like a CHEF.... COOKbillcooks..

you can not use frozen peas and onions,
the wine should be added before to start adding the broth and when the risotto is ready remove it from the heat and add some butter and some fresh parsley finely choped

I like putting veg in the broth too, peas and carrots are one of my faves. Coffee mug is a new one though. I dig the fact that you put the effort in to cook real risotto even though you were in a hurry. Keep it up.

Have not seen that one. So there is a point where you drive family nuts, is that it? I think of that as a plus.
Yes, the bigger peas can get mushy in any dish that is cooked for a while. The petite peas stay firm and dainty.

I think you're right. adding them late in the cooking helps, too, I'm sure.
