Peter comes back to the pub 3 times after she angrily tosses him out -- to show that his friendship/love is unconditional, that he's not afraid of her, and that he's willing to change and "try" to do better. At the same time the little unmalicious digs are his way of showing he's not letting her get away with having hurt his feelings or behaved rudely.

I love it that it shows Assumpta's jealousy. I remember when the whole Leo/Assumpta relationship was back on, Father Peter was the one who was jealous and I think he was jealous of Enda Sullivan too.
