Part 2 My Steak and Kidney Pie Recipe, guide to kidney and heart offal.

Recipie:
1lb6oz stewing steak, diced
10oz lambs kidney, trimmed and finely sliced
3oz plain flour
salt and pepper to taste
1 onion, peeled and chopped
Dash of fresh parsley, chopped
Dash of Rosmary
2 Bay leaves
1/3 pint beef stock
Enough puff pastry to gover your dish.

About 2 or 3 parts steak to one part kidney. Thats trimmed weight of kidney. Dice and Fry these with a diced onion till not pink. Add stock, and herbs (Parsley, Bay, Rosmary, strong flavours though, delicate things like sorrel get covered by the meaty goodness), then thicken with flour till it's like a thick gravy. Add some Chopped wild mushrooms (Blueit's go particularly well, or puff balls). Add a Dash of Worcestershire Sauce.
Put the whole thing in your pie dish. I use ready made pastry, because I'm lazy, and I never mastered my grandma's pastry method. You can line the pie with suet pastry. and cook for about an hour and a half at a low temperature. Then, cover the top with shortcrust or puff pastry, and bake for 20 at a higher temperature.

Serve with mash, or chips.

    Quite possibly I will. I'll have to talk to my local butcher, but I'm pretty sure I've got a recipie for them somewhere.

  • My brother's fiancee's family is from England and she's always complaining about kidney's. She absolutely hates them, but her mother and grandmother always cook them LOL. I haven't ever had kidney, but I have had heart and tongue (beef).
