MSG could be really dangerous for health, but Glutamic acid is inocuous and have the same fx on food preparation. But glutamic acid is much more expensive...

woops, my bad. I meant to say sweet sour salty and 'bitter'.

Sweet: Sugar
Sour: Citric Acid, commonly found in citrus fruit such as lemons.
Salty: Table Salt
Bitter: Quinine, most commonly found in tonic water.
