After cooking adobo and rice, which is arguably the most popular Filipino dish known by non-Filipinos, I decided to cook sinigang, which is probably up there in the top five when it comes to popularity. I also like to think that sinigang is much more ethnically unique to the Philippines, whereas adobo has obvious roots in Spanish cuisine (as evident even in the name of the dish).

My version of sinigang uses pork, kangkong, sitaw, talong, gabi, and kamatis, but popular variations of sinigang can include spinach, bok choy, or even napa cabbage. Additionally, sinigang sa sampalok (tamarind sinigang, the type that I made) is often seen using shrimp instead of pork. This was actually my first time cooking with pork, and I'm glad that it turned out well enough for Sarah to approve.

  • lol that's true. Everyone uses the sinigang mix these days. I'd love to learn how to make sinigang with real tamarind and/or another souring agent.

  • yeah these days, using a premade mix is being AUTHENTIC hehe.

  • how long does this whole process take? Also, I couldn't really tell how your eggplant was cut, was it quartered? We also weren't able to see you do anything else with the tomato. Did you peel the skin off after awhile and then just smush it up and add it back into the pot?

  • eggplants cut in about half inch slices, then those slices were quartered. the tomato was put in whole in the broth, then when it got soft i poked around to find it, then smooshed it with a spoon in the pot, skin and all. sinigang from start to finish takes about an hour. hope this helps!
