lol that's true. Everyone uses the sinigang mix these days. I'd love to learn how to make sinigang with real tamarind and/or another souring agent.

how long does this whole process take? Also, I couldn't really tell how your eggplant was cut, was it quartered? We also weren't able to see you do anything else with the tomato. Did you peel the skin off after awhile and then just smush it up and add it back into the pot?

eggplants cut in about half inch slices, then those slices were quartered. the tomato was put in whole in the broth, then when it got soft i poked around to find it, then smooshed it with a spoon in the pot, skin and all. sinigang from start to finish takes about an hour. hope this helps!
