those are crypts of lieberkuhn, not gastric pits, and yes the enterocytes of the colon also have a striated/brush border of apical microvilli

I will do my part:
The stain used is eosin - pink colour highlighting cytoplasm and collagen.
Submucosal plexus only got parasympathetic, also known as Meissner's plexus
Myenteric plexus = Auerbach's plexus, containing para and symp fibers
