Jenny's ButtermilkPancakes
1 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
a dash of salt
1 cup low fat buttermilk
1 egg
2 Tablespoons canola or vegetable oil
1. Sift dry ingredients into a medium bowl.
2. Combine buttermilk, egg and oil in a measuring cup.
3. Add liquid mixture to flour mixture, gently folding until just combined. A few lumps are okay.
4. Preheat an electric non-stick griddle to 375 or a large non-stick pan to medium-high.
5. Cook for about 3 minutes or until tiny bubbles appear on the top and the edges are dry, then flip and cook another 3-4 minutes. You can add 1 cup of fresh blueberries or diced apple to the batter.
*makes 6-8 pancakes

This video is smart and lets you know how easy it is to do cooking from scratch. Jenny is entertaining and has a sense of humor. This recipe is actually take about the same time it takes to use a pancake mix. I do not like canola oil and prefer melted butter. You can add bananas, nuts, chocolate chips or anything you prefer to spice it up. I sometimes like plain pancakes but mostly I like them loaded with other things. Banana and walnuts are my favorite. Go with whatever you like the best.
