Jean's acting is really good when she suddenly turns around as she senses the Phoenix force or whatever she's doing. She looks pretty and rosy too.

Basically, Bobby was too young and weak to be able to control that amount of water in order to turn into ice. Secondly, Jean didn't give anyone a choice. Using her telekinetic powers, she started the plane itself and locked the door. Jean is controlling both the water and the plane and so Cyclops cannot blast open the door.
