Remixed Cauliflower "No-Potato" Salad

I woke up thinking about potato salad but since I tend to stay away from white potatoes I needed to come up with another solution to satisfy that craving. Here's my remixed potato salad which is made from cauliflower and not potatoes.

Makes 3 cups - each 1/4 cup serving is 50.8 calories, 1.5g protein.

Cauliflower, cooked, 2 cup
Red Pepper (Sweet) 1/4 cup
Green Onion 1/4 cup
Celery 1/4 cup
Mayo, 1/4 cup
Yellow Mustard, 1 tsp
Dill Pickle Relish 1 tbsp
Hard Boiled Egg, 2 large
1 tsp Mrs Dash or equivalent (I used a mix called 21 seasonings from Trader Joe's)
1/4 tsp Salt
1/4 tsp Black Pepper
1/4 tsp Dried Parsley

Boil cauliflower for 10 minutes.
Mix all other ingredients.
Add cooled and well dried cauliflower and chopped boiled eggs.
Chill well before serving.

Looks wonderful girl!! I have heard about using cauliflower to make mashed potatoes, but I've never tried it. I will be all over this because Mama loves her potato salad!! LOL..Thanks:-)
