  • Skin is where most of the good stuff (and bad in the sense of pesticides etc. if it isn't organic) resides.

    And they call me Finnish for not peeling... it's ridiculous :D

    potatoes, like all nightshade plants, produce solanine. they do this from the eyes. the poison spreads under the skin. cooking the potato doesn't destroy the poison.

    peeling is best.

    i go out and buy fresh when i'm preparing skin-on potatoes.

    i'm not a health nut and i couldn't care about organic and stuff. it just seems reasonable though to avoid ingesting poison as much as i can.

  • This is easier, but it has 2 setbacks:

    1. A whole potato takes longer to cook then a chopped up one (so this doesn't actually save time)

    2. It won't soak up all the salt this way
