CRESCENT SPRINGS, Ky. (Liz Bonis) -- You probably know that potatoes are good for you, but what you may not know is that potatoes in the skin have more vitamin c and other nutrients than what is inside ounce for ounce. We stopped out at Remke Markets on Monday to tell you more about this Peel Appeal. Researchers at UC Berkeley say the pigments in the skin are high in fiber. In an apple, they are also high in pectin to help control blood sugar and blood cholesterol levels. These also have phytochemicals which are natural cancer fighters found in the color and texture. Now we are not telling you to only eat the skin, but if you can include it in your diet rather than toss it, it is good for your body and your total health.
