When revealing the Search bar, the cursor must go directly into the text field. If the user has to drag the bar to open it and then click inside the text field to type, you've wasted their time.

How is this better? It's actually more work now for the end-user. Before Maximise/Restore was moving the mouse and clicking a button. Now you are suggesting the following: Moving the mouse, click, drag, release.
Old style of Gnome 2, Windows, Mac OS X etc is much less effort - thank you!

The mouse zoom feature that indicates when something is clicked is nice. Will this be implemented by default in a future release? Maybe will less zoom?

So closing a maximized application means 1. Going to the overview to close. 2. Dragging it back into a normal window and clicking the close button. 3. Clicking Quit from the application menu?
Is it possible we could have the close button rest on the right edge of the toolbar when the window is maximized, or is this too much? I guess it's not a huge deal, but I'm not sure if my Mom's going to be able to figure out how to close her maximized applications.

Looks great, but the search bar thing is not a good idea I think

That IS awesome! Now please consider using keyboard shortcuts for this as well, IMHO Gnome shell doesn't have enough of those, it's my biggest gripe with it. :-/

Losing the title bar is a really good move. Keep up the good work!
