Im not sure about fast forward, but the question of breaks theres no possibility to fake:

Garrett played with a metronome and Oliver played with an piano half-playback which holds the speed exactaly as accurate as a metronome would!

this is not faked. the only part that is altered for this performance is that the piano accompaniment was put on a machine that would allow him to make the piano faster because he did not have a real pianist who could play it fast enough for him.
