i can only buy huge eggplants here about 4 times the size of what we have in philippines and if i try to grill it, its gonna end up burning the outside but the inside uncooked..will it still work if i peel and steam the eggplant?

Nice question you have there. The reason for grilling is to peel the skin. It still works in steaming the eggplant but the grilling aroma plays an important role in its taste. It doesn't matter if its half-cooked, that is the reason why it's called "Kinilaw" in the first place. Best regards and happy cooking!

i think they've missing something in this recipe...the coconut milk...will i don't think so..but its really great when they added the coconut milk...

Coconut milk is an option but this recipe is traditionally not mixed with it. Thanks for the comment.
