After 10 days hanging out with the skins, it is time to press the grapes to get the juice. If we had been making white wine, we would have done this immediately after crushing. Grape skins give wine its color, so for red wine you let the skins stay in contact with the juice for awhile (in this case, 10 days).
Yep. They get a good washing and sterilzing before and after pressing for the year.
They get more and more purple each year, though...
