Steak Au Poivre with Dijon Cream Sauce

Recipe:

1 HT Reserve Angus Flat Iron Steak

¼ cup Dijon mustard

4 teaspoons coarsely ground black peppercorns

2 tablespoons HT Traders olive oil

1/2 cup minced shallots or red onion

1 tsp Gourmet Garden Garlic

1 cup Kitchen Basics Veal Stock

1/4 cup Harris Teeter whipping cream

½ Cup Mouton Cadet Bordeaux Blanc Wine
Preparation

Sprinkle steak with salt. Spread 2 tablespoons mustard on each side of each steak. Press 1 teaspoon pepper on each side of each steak. Heat oil in heavy large skillet over medium-high heat. Add steak and cook to desired doneness, about 5 minutes per side for medium-rare. Transfer steak to plate; tent with foil. Add shallots and garlic to skillet; sauté 15 seconds. Stir in Stock, whipping cream, then Wine and remaining mustard. Boil until thickened, 2 minutes. Spoon over steaks.

  • Cream in a tube garlic???Off the shelf beef stock in a bag???White wine with steak??? Why do american(so-called) chefs always find a way to butcher traditional french recipes.Just stick to flippin burgers.You'll be all right!

  • @mrdumpster which is why wine is not traditionally used :) other alcohol is used instead

  • @stefaef it's a weak steak au poivre by chef sellout here, no question. but he did use the wine in the sauce so the pairing is kind of a no-brainier. also, black pepper tends to bring out tannins excessively, so i think it's hard to fault anyone straying from reds against a steak au poivre...

  • love how the sauce looks, definitely going to give this a try

  • why would you drink a white wine with a steak au poivre, thats fairly backwards
