@drgnslt According to the books (canon) after the movie, luke has a jedi academy. I seem to recall he himself not being the perfect jedi, but mixing the light and dark a little. He uses dark side moves.
Light is growth, Dark is decay, and the balance is when you mix the two. Disorder comes when you try to impose too excessive a light or a dark on the galaxy. Then evil and good fight, and destroy much in the process.
Balance is grey.

@drgnslt I say the balance is itself a mix of dark and light. The emperor was pure evil, he had to be destroyed.
Anakin built up the Sith dominion and destroyed the good personified in the jedi council, and the ideals of the Old Republic. Then, he himself brought about the destruction of the sith. Afterwards: we have the New Republic, and the remnants of the Empire, reduced to running criminal enterprises and lording over desolate planets in the outer sectors.
Much like real life.

@pjnlsn The "official" line from George Lucas himself views it this way. The light side is harmony and balance, all things living together in symbiosis. The dark side is like cancer, and sows chaos, discord and is imbalanced. Pretty much everything after the final movie is after the balance has been restored and is a battle to defend/maintain it.

@CoffinBuilder89 He fell under the influence of the dark side, and brought about the fall of the jedi order. Then after the jedi were scattered, and sith reined supreme, he betrayed his master.
He restored the balance by destroying the pure light and the pure dark which created so much destruction between them.
Then after Anakin's betrayal, a new kind of jedi appeared. Luke was willing to use choke moves, etc, he was a more balanced jedi, it seems to me. Balance through mixing it all together.
