  • @12quillemall5321 Doesn't break any rules around my house. Fire is fire. You can use it to burn up your wood or you can use it to smoke your wood. I prefer to get the most out of my wood by using the propane. Works like a champ.

    I had a offset smoker given to me an every time I try to smoke anything with wood the meat come out VERY bitter...can you give me any tips?

  • @KMCReading What type of wood are you using? I prefer hickory that has been cut in the early Spring when the sap is up in the tree, but if that is not available, a bag of hickory chunks from the store will work as well. Some use mesquite or wood from other fruit and nut bearing trees such as apple, pecan, oak, etc. texasbarbeques. com has a listing for different wood types and the meats they are used for. Again, I only use hickory so I can't vouch for the other woods.

  • @BayshoreFineRider Ok, I admit I'm afraid of starting a propane fire. If you wait too long to light the gas it tends to explode. Used my turkey fryer once. I'm a chicken.

  • @1twistedworld Like doing a large turkey. With a small charcoal flame in underneath and larger in firebox. It was an all nighter and part of the day. I wired the pigs in chicken wire because you have to flip it several times. I like using coconut water to make the skin crispy. I used a 14 pound suckling. My char griller is larger than yours.

  • @12quillemall5321 I have a Char Griller like his and I have been wondering if I could cook a pig on it. How did you do it and what size was the pig?

  • I just got done with all your videos on how you make brisket. Thanks for making them- they're real clear and I think you've got a good method. That's a great smoker you have there. I use the char griller, but it can be rough to sit by the fire box all day long tending to a brisket. I need to come up with something like you've got there. I just got back from City Market in Luling and am in a smoking mood- thanks for the great videos.

  • nice smoker i built my own smoker two out of 55gal drums

  • I love my char griller. Once smoke a whole piglet on it. It came out perfect.
