On a side note, since so many people have asked...:
Vincent Valentine was killed/nearly killed by Hojo and experimented on so that he could change is physical form, thus allowing him to unleash his "Inner Demons" of sorts, Gailan Beast, Death Gigas, and Hellmasker. The experimentation also gave him near physical invincibility.
Lucrecia attempted to save him from his death-state by fusing his soul with that of the demon, Chaos, and giving Vincent's spirit similar invincibility. However, Chaos's stronger will proceeded to take over Vincent's mind. The Protomateria finally allowed him to subdue Chaos and utilize its powers.

So, in summary, he's a Semi-Demon-Shape-Shifter who sleeps in a coffin. We like to call them "Vampires" for short.
