Ingredients
1 cup split wash moong dal (available in Indian grocery stores)
1 cup potatoes boiled peeled and shredded
Approx. 2 tablespoon finely chopped cilantro (hara dhania)
1 green chili minced adjust to taste
1 tablespoon finely grated ginger
1 teaspoon cumin seeds (jeera)
1/8 teaspoon asafetida (hing)
1/8 teaspoon of baking soda
1 teaspoon salt adjust to taste
Oil to fry

  • Dear Manjula, thanks for all your wonderful recipes, i am a huge fan of indian cuisine and you have taught me so much, i am very grateful.

    I am having lots of trouble with some of the fried recipes tho, this one, the Dahi Vada, as well as the Chola tikki.

    The thing is when i fry them , i get this oily very ugly consistency and they fall apart pretty easily, nothing like yours, also when i soak in water the Dahi Vada they completely break apart and get ruined

    Any tips would be appreciated

    Consistency of the batter should be like soft dough not like a batter.

  • What is asafetida (hing)? Can something else be substituted or can it just be left out? Anyone who knows, please answer. I would like to make these tomorrow. Thanks!

  • Hi Manjula - love your videos thanks for posting and sharing how to cook Indian style. But can you help me out? I went to an Indian store to get some of the ingredients for this and the guy there told me to get Pankora masala MDH spice and use it to flavor the minar besan gram flour he sold me? Would this work, is it still considered pankora?

  • @Manjulaskitchen yes, its like a dough not a batter, the recipe for Dahi Vada seems to be more airy but i get very similar results when fried, have tried deep fry and shallow as well, and they all lack proper consistency and break apart, both are extremely oily and dont hold in form... :(

  • I have to try this recipe> I have always used a premix dal vada. They are great but this seems like it would be less expensive and homemade! Ty Manjula. Dal Vadas are on of my favorite!

  • If you had to add water in the end, why cannot e add water while preparing the moong daal paste?
