Video tutorial on how to make Pate de Fruits a fruit jelly candy. Pate de Fruits (pronounced PAT-deh-FWEE approximately) is a jelly candy made using fruit pectin.

Original Recipe:

13g pectin powder




7g cream of tartar
100g sugar
450g sugar
500g puree (apricot, raspberry, strawberry)
100g glucose

Modified Recipe I used:

In Metric:

16g pectin powder (Wasn't sure how much natural pectin acai had)
(didn't use cream of tartar, because I didn't have any)
100g sugar (mix with pectin)
450g sugar
500g fruit puree, (if you don't use a high pectin fruit like apples or berries you'll want to modify the amount of pectin)
100g Golden Syrup (add last)

US Measurements
.55 oz pectin powder
3.55 oz sugar (about 1/4 cup, maybe a little more) (mix with pectin)
15.85oz sugar (a little under 2 cups)
17.65 oz fruit puree (about 2 1/4 cups)
3.55oz Golden Syrup (about 1/4 cup, maybe a little more) (add last)

Cook to 240F (takes about 17-20 min)

Pour in a flat 1/4 sheet pan covered in greased parchment or industrial plastic wrap.
