Between now and February 18, 2011, grab your video camera and show us in three (3) minutes or less your tips for creating your "Best Beignet" fried in cottonseed oil. We'll post all video entries to our YouTube channel, and our panel of judges will pick their favorite video, based on the below criteria.

@xweetok18 Cottonseed oil can handle high temperature cooking better and won't break down and impart off flavors or odors.

@xweetok18 No, too low a smoking point. Peanut oil is ok, or Google high smoking point oils.

@binnsh Smoke point is determined by free fatty acid content of the oils - hence cottonseed oil is as high as peanut oil.
