he's not talking about fast food or 'corporatized restaurants' he's just talking about restaurants. places where local community members go out for a meal. I know what he means, so sad to see so many chain restaurants in that town and no navajo restaurants at all. My mother had a Malaysian restaurant in Australia and all those white aussies and lots of my friends sure remember the delicious food and Malay ingredients and customs, and my cousins and I could never forget where we come from, yum!

He's kind of lost touch about what the culture of the indigenous people is when he's talking about the restaurants and why the Navajo aren't 'celebrating' their food. It's not about turning it into a branded thing to excite the kids, its about respect and love/connection with the earth aka the complete opposite of corporatized restaurants.
