You scream, I scream, but Alton Brown would rather make his own ice cream...and sorbet and granita. Secrets the pros don't want you to know and how to find an ice cream machine that delivers the goods without breaking the bank.

Recipes featured in this episode: Serious Vanilla Ice Cream, Coffee Granita, and Key Lime Sorbet.

  • Alton is welcome to frolic on my frigid frontier if you know what I... Wait a second, that doesn't sound quite right...

  • Lol this guy really loves zest

  • this reminds me of my upcoming chemistry and bio exams which i should be studying for. ah well i like watching these better :)

  • @bennygreatpeople I suppose So, Otherwise their would be people walking through the shot.

  • Whoa, 1:20, it says at the bottom "Kroger 12:00 AM"

Does that mean he films his store stuff at midnight with a few extras?

  • I've made my own ice creams for years; it's a happy task I always turned to during the summer months. Thanks to Mr. Brown for this episode.

  • Is it wrong to say that it makes me turns me-AHEM- makes me very happy when he discusses food in chemistry terms?

  • I'm glad I'm not the only one out there shopping for Ice Cream at Kroger at Midnight.

  • @Arkenarge Whoever your science teacher was, they need to be fired! Unless of course you just brought in a bag of Cheetos :D

  • @ronnyrizat When AB gives us the 15%-30-% 'range' of what will work, he actually gives use the keys to the ice cream kingdom.

in theory one could Halve the sugar in the Ice cream or double the sugar in the granita and pick the balance of sweetness and texture that suits the individual.

I think that, rather than the specific recipes, this ep was about giving the viewer the tools to create ones own recipe.
