Recipe NOTE: We added more protein to the video version because I do not eat much of the rice.

Ingredients :
1 tsp evoo or canola oil
1 c each chopped onions, celery and green pepper
1 clove garlic
8 oz turkey kielbasa, casing removed and cut into bite size pieces
2 1/2 c low fat chicken broth
1 1/3 c salsa
1 1/2 c rice
1 bay leaf
1 tsp Cajun seasoning
1/2 tsp each thyme and oregano (dried)
12 oz bay scallops
1/4 c fresh parsley

How to Prepare :
Heat oil over medium-high heat, add onions, celery, green pepper and garlic until tender, about 4 mins.

Add kielbasa and cook for two minutes. Add all remaining ingredients except scallops and parsley. Bring to boil, reduce heat and cook covered for 15 mins, stirring occasionally.

Stir in scallops and parsley, cook 5 more mins until scallops are cooked through.

  • i cant have meat yet, im 4 1/2 weeks out but i love your videos and cant wait to cook them:) can you list the meats again, one of them i dont know what it is,,where are you from in the south? im from louisiana
