My boyfriend is Hindi and I once tried Kheer, good but unusual for me cause it has nuts and raisins and it's too sweet for my taste :)
but I want to try to make Kheer for him but my way :) less sugar and no spices, maybe a lil of cinnamon at the top as garnish. I want to add dried apricots and strawberries :) but kind of afraid they may make the milk into cottage :) I guess it will be wiser to boil the fruits separately :) Wish me luck :) hope he will like it :D

Hello :)
I am from Moldova, once used to be part of Romania and Russia, and since I was small I love rice with milk or rice pudding. Same as Hindi we cook the rice and milk separately, but we don't cook the rice till the end, we just boil it it once, drain the water, twice, drain the water, third time and drain the water to take the starch out of it. And we make it plain, meaning only rice and milk and 1 or maximum 2 tbsp of sugar, we don't like it too sweet in our family.

Nooo .. we always used to cook in this way.. and second way is -If there is left over rice..it can be used to make kheerr. But, the consistency of Kheer depends on ur personal prefrences.. Some like it- Thick others prefer. Bit lot milk. So, it all depends. Kheer is kheeer. theres is nO AS SUCH PUUNJJAABIIII KHEEEER...LOL

better if almonds had been peeled and halved.
Why is it Punjabi style? I think this is cooked way more often in the Hindi belt. A lot of times I see non Punjabi khana labeled as Punjabi..rather strange..

There is big difference in the Hindi belt Kheer and Punjabi Kheer.
1) Pujabi Kheer is always cooked with Milk and Rice together. Hindi belt kheer - sometimes rice and milk are cooked separtely and then combined together,.
2) Punjabi Kheer is very think as you will see from the texture in this video. Hindi Belt Kheer is not always this thick.
Having said that ppl do borrow from each other's styles and it is not black and white. My recipes are meant for ppl with Punjabi taste.
