For the loose end (the end not connected to the rest of the yarn) that's left after casting on, is there supposed to be another knot or something to secure it or am I supposed to just let it drop and it'll be stable?

@TechnologyFML You can just let it drop while you carry on knitting - it'll be stable. You will need to sew it in when you've finished - if you just cut it off it'll unravel at the bottom.

After I cast on and get ready to start my first row, I end up with a really long piece of yarn in between my needles. What is happening here?

@hoey2835 Not sure what could be happening. When you cast on like I show in the video then you only use one needle. All the stitches are on that needle. At the end of the cast on row both ends of the yarn are at the same end. Then to knit the first row you bring in your second needle. Make sure to keep the tension tight or you'll end up with loopy stitches. Then if you tighten the loop from the wrong end you could end up with a long strand between needles.
