圓山大飯店的佛跳牆是屬廣式佛跳牆,有別於一般台式佛跳牆,特別選用鮑魚取代傳統的魷魚,去除腥味,增添甘美。主廚也推薦,另一道美食料理「水梨珍珠丸」,在絞肉中加入紅­麴和水梨,使珍珠丸口感爽脆又非常清爽。
