It can sometimes be a bit tricky to froth milk with Rancilio Silvia 2009 and the 3-hole steam tip. This is a frothing attempt that turned out quite nice.
First, excess water is removed from the steam wand at 0:04. This shows the positioning of the steam tip holes. The steam valve is opened a couple of times until the steam is "dry" enough for forthing. 1dl of milk is placed in a see-through plastic container, one that hopefully allows the process to be observed from the outside as well. Normally I use a steel pitcher.
Frothing starts at 0:26 with the steam tip just below the surface of the milk. The steam valve is fully opened, which takes about a half turn of the steam knob. The milk then gains an increase in volume quite rapidly as the air forms tiny bubbles into the milk. After that the steam pressure just stirs the milk for a few seconds until the milk container is lowered at 0:32 so that more air is allowed to be mixed into the milk. Listen carefully how the sound changes when air enters the liquid. The additional air adds to the volume of the milk even more. When the volume increases no more the steam tip is dipped deeper into the milk to mix the bubbles throughout the entire container. This also heats the milk. At 0:44 steam is turned off.
Care is taken not to heat the milk too much. Too much heat would produce lumps of burned milk that would show up in the texture.

I haven't had the chance of comparing this with with the older model. I am planning however planning to buy a 1-holed steam tip to my Silvia 2009.
