Watched the entire video, Parmesian cheeses do still contain a fair ammount of oil, they can still be fattening, you just use it sparsely, it's really good to use a cheese that has a very sharp flavor that way if flavors the food without having to add to much.
I still think you should try Marinated Tofu slices, they are really REALLY good!
also the hormone thing, well the same risk can be applied to commercial chicken meat to, so it's really not much of a problem.
