    So even in something like a lemon cheesecake or something like that! I guess being that I'm not a fan of ganache, I wouldn't want it in anything other than a chocolate type cheesecake

    I probably wouldn't use it in a lemon cheesecake, no. But not just chocolate -- you could use it in a coffee cheesecake, cake batter cheesecake, plain cheesecake, caramel cheesecake, red velvet cheesecake, plain cheesecake, nutella cheesecake, etc.

    I'd consider a white chocolate ganache in a lemon cheesecake, but I agree that it isn't 100% necessary in all cheesecakes.
