Because it's the only appliable pattern here so that the hit notes will be G A B C D E F etc.

Other patterns would hit different notes in that position.

Just try the other patterns there and name the notes you're playing, you'll see there'll be flats and sharps in there.

hmmm...i dont get why the 3rd pattern is used for the key of the low G...why it cannot be the 1st or 2nd???
