Pastry Chef Stéphane Tréand demonstrates how to quickly dip Silicone Showpeels into melted Isomalt or sugar. After the coated Showpeels have cooled the sugar is carefully peeled away. The sugar 'wings' can then be assembled into a glass-like butterfly. Artisna pastry has never been so easy.

  • thanks for asking, "Isomalt is a sugar substitute, a type of sugar alcohol, used primarily for its sugar-like physical properties. It has only a small impact on blood sugar levels and does not promote tooth decay..." for a more thorough description visit wikipedia. Hope this clears this up for you.

  • I have to make my daughter's wedding cake and these butterflies would be fantastic.

    Please may I have some info on the sugar recipe. Is it all just sugar with nothing added and what does the teperature have to be to use it. Would really appreciate this help. Thanks.
