How I make my sauce. Ok, I actually tried to measure things and came up with this:
LIQUIDS:
• 3/4 cup Soy Sauce (thick & dark)
• 3/4 cup Vinegar (white)
• 1/4 cup Olive Oil
CHOPPED STUFF:
• 1/4th Lime (peel included)
• 10-20 Scallions (depending on size)
• 1 Onion
• 7 sprigs Thyme
• 15 Scotch Bonnet or Habanero Peppers
• 8-10 pegs of Garlic
• 1"-2" of Ginger root
DRY SEASONS:
• 3/4 cup Pimento Berries (Allspice)
• 1 teaspoon Nutmeg
• 1 teaspoon Black Pepper
• 1 teaspoon Salt
• 3/4 cup dark Brown Sugar
This was enough to marinate 17lbs of chicken:
• 4.34lb whole chicken (split in half)
• 4.23lb whole chicken (split in half)
• 4.56lb thighs
• 4.19lb drumsticks
