bigger wok [or less stuff in it at a time], bigger fire- a portable propane burner that has an output of 65k btu is about $90cad [you can't get more than 12-15k btu on what you have and you won't get the wok hay taste]. you need to cook outside though unless got a powerful fan...
blanch carrots and broccoli before stir frying- nicer color and more tender.

yea yea I had to quickly cook a sh!t load and bring to the church for 2 dozen people, it turned out great!

I don't know about that plum sauce, makes it sweet. I prefer savory and maybe spicy.

Where's the cabbage? I love cabbage with lo mein or chow mein.

Koon Chun plum sauce is great if you can find it buy it. Other items such as hoisin and soy balance out the sweetness. Oh yea and I could have added cabbage but I didn't in this recipe.
