The phrases you mention contain harmonics. Gently cover any string at frets 5, 7 or 12 with a left hand finger (without pressing down, simply touch lightly), then pluck with a right hand finger as hard as you can. Voila! a harmonic.

Just one correction - "Noy" is "Noi", and as you wrote, it is a catalan folk song, from Catalonia, but not from Spain =)
