1 cup white wine
1/4 cup white wine vinegar
1 finely diced shallot

boil to almost nothing
add

225 gms (8oz) unsalted butter (a little at a time)

thyme and pepper corns optional

  • Looks yummy, but veritually every other source credits the invention of Beurre Blanc to a French chef called Clémence Lefeuvre around the turn of the (20th) century. Chef Lefeuvre died in 1932, only 5 years after you claim this sauce was invented, yet she was considered a national treasure by the time she died, suggesting that she had invented the sauce much more than 5 years earlier. Plus, it's called "Beurre Blanc" a French name not Walangongaloo, which is what I would expect from a Kiwi :P

  • Great job. At least you do no claim it is beurre blanc and add cream to it unlike some video of some famous culinary school's chef instructor haha! Good job!
