Looks yummy, but veritually every other source credits the invention of Beurre Blanc to a French chef called Clémence Lefeuvre around the turn of the (20th) century. Chef Lefeuvre died in 1932, only 5 years after you claim this sauce was invented, yet she was considered a national treasure by the time she died, suggesting that she had invented the sauce much more than 5 years earlier. Plus, it's called "Beurre Blanc" a French name not Walangongaloo, which is what I would expect from a Kiwi :P
