I'm not sure how much this helps with special stages, but:
1) You can practice them in time attack with unlimited time to learn the UFO movement patterns and layouts, but water doesn't affect your time at all.
2) The UFO that appears in the middle when your time drops below 20 doesn't count towards the ones you have to destroy, but gives you an extra 30 seconds and, as far as I know, will keep appearing until you win or lose whenever those conditions are met. That thing is your friend.
