Spring weather is upon us and it's an ideal time to look at spinach, a green that 56% of Americans swear is their favorite vegetable.... Right!
Spring's cool temperatures are ideal for growing this teeny little seed into some flavorful and hardy greens—in fact, spinach plants can withstand
occasional temperatures below freezing once they have gotten a start in life. But, in the heat of summer, spinach has to be harvested in the baby leaf phase, before it gets thick and chewy. From sprout to harvest is only about 7-8 weeks, so there is time for a few spring plantings and several in the fall too.
