@projectstreet Your wrong. California puts chemicals in their water. Try doing some research before you blurt comment out. The chemicals can alter the way the dough reacts with the water. New York water is more fresh.
Just like Cheese from Wisconsin is not as lean as California cheese. there are differences in water.

I find no difference in the pizza they are both delicious but what is different is the way PIZZA is spelled in the DESCRIPTION! ;)

I've had both and i personally prefer NY pizza, not because I live in Brooklyn but it actually is much better.

What recording Equipment did you use for the Commercial at 7:53? (Microphone, preamp, software, mixer, etc?) It sounds really good.

@JRFWhatIsItNow I just used a samson USB mic. I recorded into Amadeus Pro and that was it. I edit my video in Final Cut

I have to wonder about the yeast. Those little guys have two jobs - secrete alcohol, and belch carbon dioxide. But I don't know enough about yeast biology (heck, I was a slow learner on human biology) to know how different chemicals in the water might affect the yeast. Be interesting to stuff the two doughs into something tall and cylindrical, like a pitcher, to make it easier to compare how fast they rise.
