Just wanted to quickly show you my breakfast that I made which I was craving all last night. It's vegan tofu salad yummmmm.
Calories: Probably runs from 100-150 cals though I said under 200 per serving.
Recipe for one person:
You need: Firm tofu (only need 1/4 block for single serving size), tahini sauce (.5-2 tsp or to taste), organic dijon mustard to taste, ground tumeric, sarachi chili sauce (optional), black pepper, fresh chopped garlic (1 tbsp), vegetables to your taste (I chose about a tbsp chopped bean sprouts, 1/2 tomato, one hand-length cucumber, 2 stalks of parsley and 2 stalks of scallion).
Directions: First take a fourth of the firm tofu block and place into a mixing bowl. Add the tbsp of chopped garlic, a pinch of black pepper, about .5 tsp of the ground tumeric, .5-2 tsp tahini sauce (I used about .5 since it has lots of calories but the more you add the better the taste!), about .5-1 tbsp dijon mustard, and liberal amounts of sarachi sauce (really gives it a kick~) to your liking to the bowl. Take a baker's whisk and start crushing the firm tofu into little crumbles, incorporating the spices into it as you go. Keep mixing and crumbling the mixture for about 2 minutes until it looks uniform and like egg salad. Get out your fresh vegetables and chop them up into little pieces. Add them to the bowl and mix and you can garnish it and/or place mixture on a big leafy green or on a salad and voila! A beautiful healthy vegan diet-friendly breakfast scramble.. yummmmmmy :oP~
Prep time: including chopping veggies, about 10 minutes and no stove-top necessary!
Add spices and ingredients to your liking!

  • Nope, you can eat it as is, but you can prepare it to your preference~! It doesn't pose any health hazard, many people eat cubed tofu uncooked in salads and such~
