  • Major difference of Thalassery Biriyani / Malabar Biryani / Kozhikode Biriyani is the rice used for making it. ' Kayama' - a special variety of rice ( somebody call it as 'jeerakasaala' Rice or ' Kolam' Rice) with a peculiar good aroma is the secret of this Biriyani. Malppuram to Kasargod people use this variety of Rice. But from Thrissur to Trivandrum and in other part of the country people use ' Basmati' variety rice - a long variety rice.
