Maakouda is the ultimate Moroccan comfort food. Forget hash browns and french fries, these well-seasoned patties flavored with cumin, parsley and cilantro are going to become your favorite snack! This dish is a popular street food in Morocco, sold in a sandwich with bread, lettuce, tomatoes, and hot sauce; but can also be served as an appetizer or as a side. Enjoy!

  • Hello Alia, I love your recipes and learned alot from you. I married a man from Algeria and they have lots of the same food. But I have 1 question, is there an other name for the herp salentro? that you use with the maakouda. Greatings from the netherlands and please do'nt stop cooking .

  • @2104maryam

    it's "chopped cilantro" :-)

I think now it will make sense - also you can click on the link in the description to get the written recipe (sometimes people can not understand my accent).

    hope this helps!

  • I cannot believe you people are offended by potato cakes. Do us all a fav and just don't eat them.

  • It's not about potato cakes at all Janeways...it's about a deep seated hate between Algeria and Morocco. When I was in Algerie I found the same type of sour Algerians as this woman and couldn't wait to get out. When I go to Morocco, the ppl are sweet and smiling like Alia and wish I never had to leave. Just because they're in Mahgrebi doesn't mean they are the same, no more than Mexican and American is. This Algerian gives very poor impression of his/her country by making petty comments

  • Hi Alia, I m from Pakistan, and maakouda is a very popular dish in our country witht the name of potato cutlets. I usually use bread crumbs instead of cornflour. some times I add little quantity of mayonnaise in it. If feels really good that in our Muslim countries we have some common dishes with little bit change of spices and style. Anyway, love for you and all muslims brethren in Morroco ...from Pakistan ;)

  • Hello Alia. I'm originally from Algeria, tlemcen. Because it's next to the border with oujda, my family and I combine Algerian and Moroccan flavours. In tlemcen, we use the same recipe but we add curcuma . You should try to add it in your recipe, you will love it :-) Take care and keep on the good work
