I just had it last night. My new favorite beer EVER. I like a bit of a head on it too, but like you, I like the sediment. I pour all of it in and I thought the little floaters and such were real sexy. I didn't pair mine with anything, but I'm sure cheese would go really nicely with it. This stuff is almost $5 a bottle, but I really want to go and stockpile it. Cheers!

1) It's not "Abbey 12", it's "Abt 12". Abt is for Abbot, which is the leader of a monastery. Abt, or Abbot, is titled to quadruples (or highest beer) because it was brewed for the Abbot of the brewery/monastery.
2) That Abt 12 is on the lees... so pouring out the last drop and getting yeast in it isn't desired. That's why there's "floaters" in there.
3) Your buddy obviously can pour a beer better than you. You want a tall head to kickup the aromatics and protect the beer from oxidation.

That looks like an interesting beer! Chimay Cheese where can I pick that up? I've never had this beer but I'll give it a try! Great Review!

Wow Belgium beer and Belgium cheese
makes for an awesome review. Alls that is missing is the current temperature of Brussels. Unfortunately they don't carry this beer at bevmo. They do have the St Bernardus
Tripel, which gets an A and A- on beer
advocate. So I'll try that and the cheese if I
can find it.

The St Bernardus Tripel is very good also, I have not been let down by this brewer. The Watou Tripel is the next one I am going to try and get.
