it was fast - but lacked the "love" of sushi - it looked like he was doing a chore - and it's my first time watching a chef NOT use his hands - isn't there some golden rule that the real deal sushi chefs use their hands?

according to howcast; it's probably good to put a thin amount of sushi rice on the nori, enough to see the nori through the rice.

he only needs one tempura shrimp in the sushi roll, not two.

not enough rice on the outside and he squished it too much. you can see the nori through the rice, looks sloppy.
