  • not enough rice on the outside and he squished it too much. you can see the nori through the rice, looks sloppy.

  • it was fast - but lacked the "love" of sushi - it looked like he was doing a chore - and it's my first time watching a chef NOT use his hands - isn't there some golden rule that the real deal sushi chefs use their hands?

  • according to howcast; it's probably good to put a thin amount of sushi rice on the nori, enough to see the nori through the rice.

  • he only needs one tempura shrimp in the sushi roll, not two.
